This study was carried out with the aim of extracting dates seed oil (Phoenix dactylifera L.). After physicochemical analysis of the fruits and seeds of local Iraqi varieties: Al-Zubaidi, Al-jbjab, Al- Halawi, Al-Sayer, Al-Majdoul, Al-Zahidi, Al-Berkawi using the method of saxolite.
The results seemed as follows:
1-It was shown many differences in the physical and chemical properties of the extracted oil, such as specific gravity, refractive index, viscosity, melting point, color, free fatty acids, acidity, peroxide number, iodine number and saponification number, where Sayer excels in specific gravity (0.9509), in viscosity (19.98) units, melting point (19.9) 0?¡, while as-Sayer variety has superiority in refractive index (1.5593) and iodine number (53 , 45) mlg / 100g, while the grade of al-Zahidi in the number of acidity (1.21) mlg / gram of oil and free fatty acids (0.163)% and the saponification number (221.70) mlg / gram of oil and the number of peroxides (1 , 67) ml equivalent / kg of oil.
